Ridgeline

Ridgeline is the blend we built the roastery on. Brazilian Cerrado brings the body and the chocolate; a washed Colombian keeps the finish clean so it does not turn flat under milk. We roast it two shades past first crack, which is dark enough to caramelize the sugars without dragging ash into the cup. It pulls forgiving shots on a home machine and holds up in a twelve-ounce latte.
